Avocado Oils R. Meat Balls

Blend the tomato sauce, chipotle peppers, onion and garlic until smooth. Heat the Avocado oil in a pot and add the sauce and the chicken broth. Bring to a boil. Place the beef in a bowl, add the beaten eggs, chopped parsley..

Ingredients:

  • 26 ounces tomato sauce
  • 3 chipotle peppers in adobo sauce
  • 1/4 onion
  • 1 clove garlic
  • 1 tablespoon Don Ruben Avocado oil
  • 1 cup chicken broth
  • 1 1/2 pounds ground beef
  • 2 eggs, beaten
  • 2 tablespoons parsley, chopped
  • Salt and pepper

Preparation:

Blend the tomato sauce, chipotle peppers, onion and garlic until smooth. Heat the Avocado oil in a pot and add the sauce and the chicken broth. Bring to a boil. Place the beef in a bowl, add the beaten eggs, chopped parsley and salt and pepper and form meatballs. Once the sauce comes to a boil, lower to bring to a simmer, add the meatballs and cook through, 15 to 20 minutes. Serve with black beans and rice.
