Avocado Oil Chicken Milanese

Using three shallow bowls, add flour to one, the eggs to another and the breadcrumbs, Parmesan cheese and herbs to the third. Place each chicken breast between 2 pieces of saran wrap and lightly pound using a meat mallet

Ingredients:

  • ½ cup of flour
  • 2 eggs, beaten
  • 1 ½ cups of Pancho breadcrumbs
  • 1 cup of grated Parmesan cheese
  • ½ tablespoon of fresh thyme
  • 2 teaspoons of fresh parsley, chopped
  • 6 boneless and skinless chicken breast
  • Salt and Pepper
  • Don Ruben Avocado oil Natural

Preparation:

Using three shallow bowls, add flour to one, the eggs to another and the breadcrumbs, Parmesan cheese and herbs to the third. Place each chicken breast between 2 pieces of saran wrap and lightly pound using a meat mallet until about ¼-inch thick. Season with salt and pepper. Dredge the chicken in the flour to coat lightly, then dip into the beaten eggs, then coat in the breadcrumb mixture. Set aside while you heat a large sauté pan with Don Ruben Avocado oil Natural over medium heat. Add the chicken and cook on each side until golden brown – about 3 to 4 minutes on each side – and serve warm with a crisp green salad. Mmm…
